Maple Chipotle “Campfire” Cornbread

Making bread gives me a rush of good feelings. The flour and water becoming a smooth and stretchy dough, the yeast doing its magic, the wait for a rise, and then the final transformation in the oven—it’s a miraculous process. But when I feel truly lousy, it can seem daunting, and the payoff too distant. Cornbread, though, all mixed up in one bowl, poured into a pan, and baked immediately—that feels attainable. This cornbread is sweet and smoky and extra corny. It reminds me of the scent of a campfire clinging to my hair and clothes and of communing with people I love in nature. And you’ll have it ready in under an hour.

Makes 8 pieces

4 tablespoons (½ stick) butter, melted, plus more butter for greasing the pan

1 cup all-purpose flour

1 cup medium- or coarse-grind cornmeal

1 tablespoon baking powder

1 teaspoon fine sea salt

2 large eggs

1 cup whole milk

¼ cup plus 1 tablespoon maple syrup

1 chipotle in adobo sauce, finely chopped

1 cup corn (fresh, canned, or frozen and thawed)

1 teaspoon adobo sauce (from the can of chipotles in adobo)
